Our mission is to serve good, fresh food, from a clean kitchen, in a quick and friendly manner, with prices that offer a bang for the buck. Simple enough to say, but actually accomplishing this small list takes hard work.
My family’s history in Central New York began in 1869 when Henry W. Skinner first arrived from Kent, England. My grandfather worked at the Oneida Silversmith factory. My parents, Vaughn and Sally, met in Oneida High School and have been living in my hometown of Fabius (20 miles west of Hamilton) since the 60’s. My dad’s brother, Terry Skinner, graduated from Colgate in 1965. His fondness for this community and the university influenced our decision to move here.
After graduating from the culinary arts program at Cobleskill State in ’89 I found my way to Telluride, Colorado, to pursue my interests in skiing and cooking. During my time in the mountains I owned and operated four different and successful businesses: a concession on a golf course, a concession on the Telluride ski area, a BBQ restaurant, and a sports bar. After selling our last business, my wife and I decided to relocate to CNY, both for family reasons and the availability of our historic building. We opened for business in December of 2011. For us, Hamilton provides the best mixture of schools, size, economy, and location in the CNY area, which allowed us to embrace leaving beautiful Colorado for this adventure.
My wife Nicki and I met in Telluride while she was managing a local grocery store and I was operating a BBQ restaurant. This is our third restaurant together, Nicki keeps our books straight and our office systems going, along with all the little things that keep us moving.
Our store offers a “create your own” salad station in addition to a list of traditional salads. We use Boars Head meats in our deli sandwiches, and many of our entrees are unique to the Eatery. We also offer packaged items such as chips, sweets, yogurt and beer…lots of varieties of beer. We have built a custom beer cooler that enables us to carry an extensive list of craft, microbrew, import, and all-around unusual styles of brews and ciders.
Hamilton Eatery is lucky to have assembled a great group of employees who help make our dream-work based on their team-work. Collectively, we have over 200 years in our industry!! We value having a workplace that is respectful to all of our stakeholders, customers, employees, purveyors and ownership. We seek to be an inclusive and transparent kitchen, and overall operation. We share gratuities, offer competitive pay and participate in a matching simple IRA retirement program with our staff.
